The Vecchie Vigne Riserva is Paitin's narrowest cut of Sori Paitin, the Neive vineyard the family has bottled under its own name since 1893: only the oldest vines, planted between 1953 and 1980, southwest-facing on the Serraboella hill at 290 to 310 meters in sand and marl. They first made this Riserva in 1999, once those vines had passed forty-five years old. Fermentation happens in steel with a maceration of three to six weeks and a submerged cap through the winter, followed by about three years in large, old Slavonian and Austrian casks; the whole production comes to roughly one cask. 2008 is one of the classic, structured Piedmont vintages, and at eighteen years this one still has plenty of spine left. It arrives from a private cellar, it rewards a long decant, and it is savory and tightly wound rather than fruity: a Nebbiolo for the dinner table, not the cocktail hour.
