Winemaking in the Doquet family dates to the early 1930s when Pascal's grandfather began making wine. Pascal started working with his parents in 1982 and managed the family estate Doquet-Jeanmaire from 1995-2003 before founding his own domaine in 2004. He farms just under 9 hectares, with more than 5 hectares in Grand Cru sites including Le Mesnil-sur-Oger. Certified organic since 2010, Doquet stopped chemical treatments in 2000. Diapason is 100% Chardonnay from Le Mesnil-sur-Oger Grand Cru, blended from multiple vintages with reserve perpétuelle, fermented with indigenous yeasts, and aged minimum 3 years before disgorgement.

"The golden-yellow colored NV Grand Cru Le Mesnil sur Oger Diapason displays a deep, intense yet fresh, fine and complex bouquet of great elegance and terroir expression with chalk and citrus notes. Vinified 45% in small oak barrels, this is an intense, fresh and elegant grand cru, and the finish is intense and perfectly ripe but still precise, refined and delicately salty. This is a truly smart assemblage of two contrasting vintages (2008 and 2009) that takes the best of both to compose something new and complete. It's an excellent cuvée indeed." —Robert Parker

"A superb non-vintage blanc de blancs that comes exclusively from the grand cru Le Mesnil-sur-Oger. The wine opens with zippy lemon peel, gooseberry and exotic passion fruit aromas. With time, a lovely mineral/saline depth is revealed, with a creamy texture, pleasantly dense mouthfeel and impressive length. Grapes from the ripe 2015 vintage form the base, with the balance completed with a reserve from solera. The oldest vines date to the 1920s; half was fermented in old barrels and half in tank before ageing for six years and disgorging with a dosage of 3.5g/L."

Chalk cellars and understatement. Pascal Doquet is one of Champagne's premier vignerons, farming old vines in Vertus and Le Mesnil-sur-Oger organically since 2010. His cellar is carved directly into chalk; his harvest is precise; fermentation is native yeast in enamel tanks. The wines are held for a minimum of three years, and the philosophy is purity first. Doquet's Champagne tastes like it means something.
