Grand Cru grower Champagne hiding in plain sight: Pascal Doquet owns some of the choicest parcels in the Cote des Blancs, including Grand Cru vines in Le Mesnil-sur-Oger, the same hallowed village home to Salon and Krug's Le Mesnil (his Vertus holdings are Premier Cru). So why isn't he famous? He'd rather talk about his vines than his cellar work, and his relative anonymity is exactly what lets bottles like this stay (deliciously) under the radar. The estate has been certified organic since 2010, with only the most pristine fruit selected, gentle pressing, native-yeast fermentation, and minimal batonnage. This Extra Brut is built on the 1998 base vintage, giving it real maturity and depth, with the toasty, mineral complexity that only comes from extended time on the lees and in bottle.

"Pascal Doquest's NV Brut Grand Cru shows lovely generosity and richness in a fairly extroverted style. Hazelnuts, licorice and dried apricots all come to life in this expansive Champagne. The wine tapers off a touch on the finish, where mineral and graphite notes seem to take on more prominence. This is a beautifully balanced Champagne that offers quite a bit of complexity and nuance for a non-vintage bottling. The NV Brut Grand Cru will be even better in a few years." —Antonio Galloni

More about Pascal Doquet

Chalk cellars and understatement. Pascal Doquet is one of Champagne's premier vignerons, farming old vines in Vertus and Le Mesnil-sur-Oger organically since 2010. His cellar is carved directly into chalk; his harvest is precise; fermentation is native yeast in enamel tanks. The wines are held for a minimum of three years, and the philosophy is purity first. Doquet's Champagne tastes like it means something.
