Pure Pinot Noir Champagne from the Aube's biodynamic vanguard. The Gerbais family has farmed in Celles-sur-Ource since the 1930s, and current vigneron Aurélien Gerbais has pushed the estate into biodynamics and single-parcel bottlings that are the talk of grower Champagne. Les Grandes Côtes is a Blanc de Noirs sourced from a southwest-facing slope of Pinot Noir on a fascinating geological mix of Portlandian and Kimmeridgian limestone. The cuvée is built as a perpetual reserve (a solera) running back to 2011, with the base 2019 vintage at its core. Aged 36 months on lattes, finished at 3 g/L Extra Brut. Concentrated and savory: peach, pear, beeswax, fresh-baked bread, and orange oil over a deeply mineral spine. Grower Champagne with real depth and a real story.
