Bouzy's true specialist since 1768. Eight generations of Paillards have focused exclusively on the Grand Cru terroir of Bouzy, and brothers Antoine and Quentin (now in charge) farm organically while using low-temperature fermentation and minimal dosage to preserve freshness. They've since expanded to Ambonnay, Verzy, and Verzenay—always chasing the same goal: pure terroir in a bottle.
