Stefan Muller, Riesling Kabinett Sonnenberg "Alte Reben", 2025

Year after year, this is the Stefan Müller Kabinett that his importers call their favourite, and the reason starts in the dirt: a parcel of roughly 50-year-old vines in the western, south-west-facing stretch of the Niedermenniger Sonnenberg, planted on iron-rich slate over deep red soil. Müller deliberately keeps his old vines rather than replanting them, and here that patience pays off in a Kabinett with more depth than the style usually promises. The fruit is all picked by hand, and the vines never see herbicides or pesticides. Müller runs a small, third-generation, 11-hectare estate in Konz, in the Saar Valley (the cool, steep side valley that feeds into the Mosel), and he's one of the growers giving its red-slate sites their due. Fun detail: each of his labels shows a topographical map of the vineyard, so you can trace this slope on the bottle while you drink it.

More about Stefan Muller

The Saar makes some of the most delicate, mineral, laser-focused Rieslings on earth, and its steep, cold slopes, long kept famous by Egon Müller, now yield some of the most electric wines anywhere. Stefan Müller farms about 10 hectares without herbicides or pesticides: Krettnacher Altenberg on blue slate and green Diabas, Euchariusberg vines planted in 1944 and 1964, and old, ungrafted vines on red slate in Niedermennig. Wild yeasts, no recipe, dry to sweet as each site dictates. Succulent, aromatic and true to the Saar.

Tasting Notes & Food Pairings

Perfect Pairings

Spicy Thai larb or green papaya salad, Sichuan dan dan noodles, pork belly bao, smoked trout with horseradish cream, glazed ham with grainy mustard, or a plate of aged Gouda.

Tasting Profile

Expect the classic Saar Kabinett profile: green apple, white peach and lime, with the smoky, spicy edge that red slate tends to bring. It's light-bodied and gently off-dry, with a touch of sweetness balanced by racy, cool-climate acidity, and old vines typically add extra depth. The finish should be long, mineral and refreshing.

WINE GUIDES

German Wines

Is there a better grape than Riesling? Is there a better value? Its fruit purity, its perfume, and its mineral nuance are all unparalleled. And for centuries, the top German Rieslings were priced accordingly: at least as expensive as the top red wines of Bordeaux and Burgundy. But nowadays you could spend a lifetime exploring Germany’s great Riesling-producing regions while staying well within your budget. You might take an occasional break to try Germany’s other white grapes or perhaps a glass of Spätburgunder (the local name for Pinot Noir). It’s time to get started!
