Carsten Saalwächter likes to call this bottling his "Saalwächter water," meaning a wine so refreshing you should drink it like water. Coming from a grower this serious, that's an invitation worth taking up. Carsten is fiercely devoted to Silvaner, a grape that runs deep in Rheinhessen's history but that most of his neighbors barely think about. The old vines, up to about 50 years of age, grow on limestone parcels in and around Ingelheim, the village where Charlemagne built his palace, looking across the Rhine to the Rheingau. His sites in cool northern Rheinhessen are often wind-swept and face slightly north, which gives his wines firm acidity. He also presses hard on purpose, because he believes the phenolics that come out add structure. (His importer jokingly calls him "the Coche-Dury of Ingelheim" for how dense and clear his wines are.) The 2024 is a crisp, dry, light-bodied white from organically farmed vines, and an easy way into the work of one of Germany's most exciting young winemakers.

Antonio Galloni

92 points

"The 2024 Silvaner Alte Reben grows across six north-facing sites in yellow Tertiary limestone from mature vines that are almost 50 years old. The nose is immediately salty, with an oystershell quality. The palate adds smooth, creamy yeast, clothing all of that salty, ocean-kissed stoniness in cashmere softness. Beautiful concentration and vivid acidity make this understated wine shine. Simply gorgeous and long." —Anne Krebiehl MW

"Tasted as a sample ready to be bottled, the 2024 Silvaner Alte Reben offers a clear, fresh, deep and calcareous bouquet with saline/iodine nuances intermingled with herbal and pencil shaving aromas. Delicate, elegant and light on the palate, this is nonetheless an intense and substantial Sylvaner with a refined phenolic structure and lingering minerality from the Ingelheim limestone soils. It aged in stücks and 800-liter casks for 18 months. 12.5% stated alcohol. Natural cork. Tasted at the domaine in April 2026." —Stephan Reinhardt

Tasting Notes & Food Pairings

Perfect Pairings

White asparagus with hollandaise or brown butter in spring, smoked trout with horseradish cream, pork schnitzel with a lemon wedge, or Flammkuchen with onions and bacon.

Tasting Profile

Expect old-vine Silvaner in a crisp, dry, light-bodied style: green apple, pear and lemon zest with a gentle herbal edge and a stony, chalky note from the limestone. Firm cool-climate acidity keeps it bright, and hard pressing typically adds a little textural grip. Think of the refreshing snap of a lean Chablis, with a clean, slightly saline finish.

WINE GUIDES

German Wines

Is there a better grape than Riesling? Is there a better value? Its fruit purity, its perfume, and its mineral nuance are all unparalleled. And for centuries, the top German Rieslings were priced accordingly: at least as expensive as the top red wines of Bordeaux and Burgundy. But nowadays you could spend a lifetime exploring Germany’s great Riesling-producing regions while staying well within your budget. You might take an occasional break to try Germany’s other white grapes or perhaps a glass of Spätburgunder (the local name for Pinot Noir). It’s time to get started!
