Natsumikan, the Japanese summer orange, tastes like a mandarin and a Seville orange arguing: sweet, sour and pleasantly bitter all at once. Heiwa Shuzo blends locally grown natsumikan with amanatsu and lemon, pressing the fruit with the skins left on so the zesty oils and a touch of bitterness come along for the ride. That juice goes into the brewery's Tsuru-Ume umeshu, or plum wine, base, producing something citrusy, richly orange and faintly fizzy. The alcohol is low and the balance leans refreshing rather than sweet, which is the whole trick. Serve it very cold over ice, or top it with soda for one of the better summer drinks available anywhere.

More about Heiwa Shuzo Kid Tsuru-Ume

Heiwa Shuzo is best known for KID, its clean, approachable sake. The Wakayama brewery's Tsuru-Ume fruit liqueurs are just as worth knowing: low-alcohol, tart, refreshing drinks built on a sake base rather than neutral spirit and made with fruit grown nearby.

The brewery was founded in 1928 in Kainan, in Wakayama Prefecture, and is led by president Norimasa Yamamoto. Heiwa means 'peace.' Its brewing water is Koyasan Nansui, soft spring water that flows down from the temple mountain of Koyasan.

Wakayama is Japan's ume heartland, and the original Tsuru-Ume is an umeshu made with the prized local Nanko plum. The range branches out into other local fruit from there. There's yuzu, blended juice and skin. There's strawberry. And there's a summer orange made from natsumikan, amanatsu and lemon, pressed with the skins on for a pleasant bitter edge. Serve them cold, over ice or topped with soda.
