More about Takatenjin

Takatenjin is a sake label from Doi Shuzo, a small family brewery in Shizuoka prefecture known for the bright, fresh, gently fruity style the region is famous for. The name comes from Takatenjin Castle near Kakegawa, which fell to Tokugawa Ieyasu in 1581.

The Doi family, village headmen and landlords, began brewing in 1872; at home the brewery is best known for its Kaiun brand. For about forty years, until his death in 2009, its master brewer was Shokichi Hase of the Noto guild, one of the great toji of his generation, and the Soul of the Sensei Junmai Daiginjo honors a former toji. The brewery uses soft local water and Shizuoka yeast, and runs largely on solar power.

Expect clean, dry, aromatic sake, lovely with fish and lighter dishes.
