Sechet earns its name. It is a dry, poor pocket inside the Vaillons group on the left bank where the Kimmeridgian marls thin out and give way to white clay, and the setting is naturally cold, so ripening slows to a crawl. What comes out is stony and incisive, with the kind of freshness that holds for a decade or more in bottle - and Billaud's parcel here is family ground, planted by his great-grandfather, which is what the Vieilles Vignes on the label refers to. He left the family's Domaine Billaud-Simon in 2009 to build his own gravity-fed cellar in the centre of Chablis, over vaults dating to the thirteenth century. 2024 was a violent growing season - the Serein flooded the town in April, frost followed, hail hit on the first of May and mildew ran all summer, with yields collapsing to a fraction of normal - and this cold, slow site turned very little fruit into something unusually intense. Cellar it, or drink it very cold alongside shellfish.

"From a .60 ha holding of 100+ year old vines raised in 100% stainless; in 2024, this produced yields of only 10 hl/ha. Cool, pure, layered and airy aromas focused mostly on citrus confit, lemongrass and oyster shell. There is seriously good concentration to the powerful and palate staining medium weight flavors that display equally good depth and persistence on a mildly rustic finale. This is old school Chablis, a bit rough and tumble but packed with potential."

"From the oldest vines in the domaine that suffered hail damage, the 2024 Chablis Les Séchets 1er Cru was made in a WineGlobe as yield was just 15 hl/ha. No sulfur dioxide was used and there will be around 20% barrel aging in the final blend. It does possess a "natty" edge on the nose, with notes of yellow fruit, melted wax and just a touch of honeysuckle. The palate is fresh, taut, quite linear and correct. This is slightly tapered toward the pointed finish, possibly due to the more sterile glass container. Let's see how this will show in bottle." —Neal Martin

"From vines planted in the 1920s and 1930s, the 2024 Chablis 1er Cru Séchet Vieilles Vignes produced only 10 hectoliters per hectare this year and, given the tiny volume, was vinified in a glass wine globe. It soars from the glass with a bouquet of Granny Smith apple, lemon oil, sage, oyster liquor and spring flowers. On the palate, it is chiseled, displaying exemplary purity, bracing acidity and a strikingly sapid, mouthwatering finish. It is particularly incisive this year, a quality only amplified by the character of the vintage." —Kristaps Karklins

Samuel Billaud made wine for over 20 vintages at his family's Domaine Billaud-Simon before branching out in 2009 with his own vision. When the family domaine sold in 2014, he secured several prime vineyard parcels in Les Clos, Vaudésir, Blanchot, and other Premier Cru sites—15 hectares total. Hand-harvest for top cuvées, measured oak use (10–20% new), stainless steel aging for village wines. This is a modernist approach to classical Chablis—mineral, precise, terroir-driven.
