Burghound writes:"This tiny 1.5 ha old school producer is the creation of the husband and wife team of Florence Lamy and Sébastian Caillat. They produce only whites and the overriding idea is to attend to every detail meticulously and methodically and whenever possible using the old ways of doing things. Their cellars are ice cold and the idea is to rush nothing. There are no timetables and the wines are bottled "whenever they're ready with a light fining but are never filtered". Moreover, they use an old Vaslin cage press, which Caillat notes that 'I press the hell out of the fruit. The idea isn't to obtain the maximum yield but rather to obtain the greatest amount of grape solids into the must. This is the life blood of a white wine, without which they don't have the requisite stuffing to age properly.' Nothing is touched unless absolutely necessary as there are no commercial yeasts, no enzymes, not much new wood and the wines spend 12 months in cask and then another 12 months in tank before ultimately being bottled by hand. Moreover, the wines are expressly and unapologetically built-to-age and based on what I tasted, that's not just marketing. The old school, almost rustic but strikingly authentic style reminds me of what I used to taste in Burgundy in the 1980s."

"The 2015 Chassagne-Montrachet Les Champ Gains 1er Cru has a very well defined bouquet with wilted yellow flowers, persimmon, white peach and hints of orange zest. This is complex, beautifully defined and very focused. The palate is very well balanced with a fine thread of acidity, a little saline on the first half, admirably strict and linear for a warm vintage. There is a gorgeous spicy vein that comes through towards the finish with a touch of lemongrass on the aftertaste. Superb." -Neal Martin
