Claire Marin kept bees in Long Eddy, New York, for years before leaving publishing to build a spirits company around her honey. Catskill Provisions uses wildflower honey from the apiaries she oversees in spirits like NY Honey Whiskey, its standout, and Pollinator Vodka, made from local corn and honey. The company is 100 percent women-owned and self-funded, with a tasting room in a converted firehouse in Callicoon. Spirits with soul, and a buzz for the bees.
