What is this wine?
Julien Guillot of Clos des Vignes du Maynes is a leading voice for biodynamic and natural winemaking in Burgundy, with his family farming without chemicals since 1954. La Baume is a Chardonnay from the high-altitude vineyards of Cruzille in the northern Mâconnais, planted on limestone-rich soils that lend freshness and mineral precision. It is farmed biodynamically, fermented with native yeasts, and bottled with minimal intervention.

Why get this wine?
Guillot’s wines are benchmarks for natural Burgundy, combining terroir authenticity with artisanal craft. La Baume captures Chardonnay in its purest form—bright, mineral, and energetic—without heavy oak or manipulation. For fans of mineral-driven whites, it’s a superb value compared to Côte d’Or bottlings.

What does this wine taste like?
Crisp and elegant, with citrus, green apple, and pear layered over chalk, white flowers, and subtle lees texture. Fresh acidity and a saline finish highlight its limestone origins.

When should you drink this wine?
Best enjoyed now for its vitality, but it will age gracefully for 3–6 years. Excellent with seafood, goat cheese, roast chicken, or vegetable gratins.
