Aligoté spent most of its life as Burgundy's afterthought — the grape you topped with crème de cassis — and bottles like this one are why that has changed. Le Crétot à Droite is a single parcel at Bouze-lès-Beaune, up in the hills west of Beaune, where limestone and marl give Aligoté the tension and salinity it needs to stand on its own. Alexandra Couvreur farms it without herbicides or pesticides and makes the wine plainly, with a long, unhurried élevage in old wood and nothing showy laid over the top. Production is very small, and the wine drinks with real cut: taut, saline, and a long way from kir.
