One of the wines that made the case for Etna's whites before most of the world knew Etna made wine at all. When Giuseppe Benanti set out in the 1980s to prove Sicily's native grapes could produce something serious, he studied the mountain's soils, its varieties and even its indigenous yeasts, and hired a young Salvo Foti to help him do it; his sons run the estate today, and it remains one of Etna's reference points. This is 100% Carricante, the volcano's great white grape, from organically farmed vines between 20 and 60 years old on Etna's eastern and southern slopes, some still trained as free-standing alberello bush vines. It's fermented and rested on its fine lees in stainless steel, with no oak, then given a couple of months in bottle before release. At around 12% alcohol it is light on its feet and heavy on flavor, and it remains one of the best values on the mountain.
