Almost every Etna bottle you know comes from the north slope; Ciro Biondi farms the southeast, which is warmer, sunnier and better sheltered from wind, and gives whites that are more perfumed, more open-knit and softer at the edges. If the north face is Serralunga, this is La Morra - not better or worse, just another side of the volcano. Biondi, an architect by training, revived his family's vineyards around Trecastagni in 1999 and has worked with Salvo Foti, the winemaker most often credited with Etna's modern revival; his own signature is fermenting his whites in barrel rather than simply aging them there, which he says builds texture without leaving overt oak. 'Outis' is Greek for 'nobody' - the name Odysseus gave the Cyclops before blinding him in a cave many believe sat near Etna itself - and this Carricante-led white is the most approachable wine in the range and the easiest way into his style. Drink it cool rather than ice cold, and with food.
