Natural wine, Argentine style: 100% organically farmed Malbec from Maipú, fermented with wild yeasts, bottled unfiltered and with nothing added in the way of sulphur. El Burro was the first organic and natural wine Santa Julia ever made, which is a bigger deal than it sounds coming from a house that farms more than 988 acres of certified organic vineyard — the largest organic vineyard holding in Argentina. The donkey on the label is a real one: Miguel, the owner's brother, played with it as a child, and when the winemakers had this wine ready to launch, the artist Emiliano Pierro — who had shown work in the winery's art cellar — had already painted him. This is not a natural wine that makes you work for it. It's purple, plummy and juicy, the kind of bottle you open without ceremony and finish without noticing, and it costs a fraction of what the low-intervention set usually asks.
