Somewhere between Amontillado and Oloroso in style, it combines the aromatic lift of flor aging with the depth and power of oxidative development.

The nose is layered and intense: toasted hazelnuts, orange peel, antique wood, sea spray, and dried herbs. The palate is bone-dry, concentrated, and textural, with brilliant acidity and a long, umami-laced finish. It’s not softened by fining or filtration—what you get in the glass is direct from the barrel, complex and alive.

"Barbadillo is somehow a specialist in Palo Cortado, and they now offer a younger, gentler and more straightforward NV Palo Cortado Criadera Selection from the Tío Río solera. It's an elegant oxidative wine, with an average age of 14 years, with a peachy nose, gentle and tender, but with a more saline and sharper palate with a bitter twist in the finish. It has an Oloroso nose and an Amontillado palate."

Founded in 1821 by Benigno Barbadillo, an entrepreneur from Burgos who made his fortune in Mexico, Barbadillo is the biggest Manzanilla producer and one of the biggest sherry houses overall. They own 500 hectares of vines, vinify all their own base wines, and age them in historic bodegas. Solear Manzanilla—their signature—set the template for everything that followed. Available in 50+ countries, they celebrated their 200th anniversary in 2021.
