An Amontillado that lived two lives: roughly a decade under a veil of flor, then more than twenty years of oxidative aging in cask, for a certified VORS solera whose average age runs to about 36 years. Bodegas Tradicion is a young house with ancient contents — Joaquin Rivero founded it in 1998 to revive his family's 17th-century sherry firm, and rather than start from scratch he bought up old casks from Domecq, Osborne and Sandeman. Unusually for Jerez, this Amontillado blends wines from all three towns of the sherry triangle: Jerez, El Puerto de Santa Maria and Sanlucar de Barrameda. Everything is done by hand, with no chill filtration or cold stabilization, and only about 4,000 bottles leave the bodega each year. Bone dry and around 21% alcohol, it wants a white wine glass rather than a thimble-sized copita, a light chill, and it will hold in the fridge for weeks once opened.

Tasting Profile

Bone dry and intense rather than heavy. Walnut and hazelnut, dried orange peel, salted caramel, iodine and old wood, with a saline snap and a very long, dry, savory finish.
