Granite soils, thirty-year-old vines and the cold Atlantic inlets of the Salnes Valley: this is Albarino built on tension and salt rather than tropical fruit. Bodegas Zarate has been here since 1707, and in the 1950s Ernesto Zarate helped kick off the region's quality revolution by co-founding the Cambados Albarino festival — then, after winning it three years running, gracefully withdrew his bottles so his neighbors could have a turn. Eulogio Pomares took charge of production in 2000 and converted the vineyards entirely to organic farming, which takes real vigilance in a climate this humid. In the cellar he ferments with wild yeast, blocks malolactic to protect the natural acidity, and ages on fine lees for texture. The 2025 is precise rather than showy, and it remains one of the most dependable pleasures in Spanish white wine.
