Zero dosage Champagne from the Cote des Bar, where the chalk of the Marne gives way to Kimmeridgian marl, the same limestone that runs under Chablis just down the road. Thibaud Brocard, the fifth generation here, farms at Celles-sur-Ource across three hillsides with genuinely different terroirs: a south-facing clay slope, a north-facing Kimmeridgian marl slope, and a south-facing stretch on Portlandian limestone along a fault. The house works parcel by parcel and gives its wines long aging on the lees, which is what builds the brioche depth that lets a Champagne carry no dosage at all. Dits-Lieux is led by Pinot Noir, with a full quarter of Pinot Blanc, a variety almost nobody in Champagne bothers with any more, and finishes bone dry. This is a Champagne for the table rather than the toast.

"Notes of peach, pear, orange zest and dried flowers introduce Brocard’s 2022-based NV Dits-Lieux, a blend of 70% Pinot Noir, 25% Pinot Blanc and 5% Chardonnay, vinified predominantly in stainless steel. Medium- to full-bodied, it is broad and giving, with a ripe core of fruit harmoniously framed by vibrant acidity, culminating in a long, phenolic finish. Fifth-generation Champagne maker Thibaud Brocard inherited the family vineyards in Côte des Bar and spent five years apprenticing in Burgundy before returning to restore them. Using organic and biodynamic farming since 2012 on their 6.5 hectares, he's crafting elegant, mineral-driven Champagne from the warmer southern reaches of the region—a fresh, uncompromising take on a place most Champagne drinkers have overlooked. These wines remind you that Champagne's boundaries are arbitrary, and the best bubbles can come from unexpected places.

Tasting Profile

Green apple, citrus peel and white flowers with brioche and toasted nut from lees aging, and a chalky, saline undertone. Bone dry, fine-beaded, with cutting acidity and a lean, mineral finish.
