Zizi is a tightly-wound, almost Chablisien-styled wine that comes from a single vineyard of old, mixed planted bush vines at around 740 meters of elevation. Very gentle extraction in lagar, with a slow decantation into old wooden vats for fermentation and aging. The minerality and tension here are extremely alluring; flavors of white fruit and flowers (orange blossom, pear, crisp green apple) play second fiddle to the texture and stoniness.
