Maule is the cool, southerly end of Chile's Central Valley, where the nights stay chilly and the acidity stays put. Casa Julia works its vineyards sustainably and keeps the winemaking out of the way here: no oak, nothing to get between you and the grape. What you get is the classic run of Sauvignon signals, all in focus. Grapefruit and lime, cut grass, a bit of green herb, and a clean, snapping finish. This is a weeknight white, plain and simple, and there's no shame in that. Serve it cold.
