A quarter-century on, this Cavallotto from the warm, generous 2000 vintage is drinking beautifully. Vigna San Giuseppe sits in the heart of the Bricco Boschis cru in Castiglione Falletto — Cavallotto's monopole, planted in 1960, only three hectares of the family's oldest vines. The house aged it traditionally in large Slavonian botti for years before release. 2000 was a forward, riper vintage that has rounded into a wine of unusual approachability for Barolo — the firm Castiglione tannins now melted, the fruit deepened from red cherry to dried plum and tobacco leaf. Fully mature, no upside ahead — this is a window-of-now wine from one of Piedmont's most quietly traditional families.

Cavallotto’s Vigna San Giuseppe shows plenty of that enveloping, layered style. Time in the glass is so beneficial, as the 2000 opens and gains quite a bit of brightness with air. The village of Castiglione Falletto is rich with superstars—Giuseppe Mascarello, Brovia, Vietti, Scavino—and Cavallotto stands easily with the best of them. Of this elite group, Cavallotto's wines stand out for their deep fruit, brooding structure, rose petal aromatics, and incredible longevity.

Most of Cavallotto's grapes come from a hill called Bricco Boschis. Cavallotto owns all of it. Thanks to a mostly southern exposure at high altitude and a complex mix of limestone and clay, it's considered one of the top crus of a village known for many great crus. Cavallotto's San Giuseppe Riserva is made from the best grapes from the vineyard's oldest vines, mid-slope.

Cavallotto's other Riserva comes from Vignolo. It is next door to Bricco Boschis and just a little lower down the slope. The wine tends to be less powerful and more floral, and is perfect for drinking on a slightly earlier timescale than the San Giuseppe.

Perfect Pairings

Vitello tonnato, brasato al Barolo, or hard alpine cheeses — Cavallotto's classic pairings hold. With the wine this evolved, lean toward tender preparations: braised short rib, roasted squab, or aged Bra duro.

Tasting Profile

Fully resolved and rounded. Dried plum, sweet tobacco, dried rose, leather, and a whisper of tar. The Castiglione Falletto structural backbone is there, but melted into the perfume. Long, savory, gently bitter finish.
