Champagne made with no sulfur at all - none during winemaking, none at bottling - and no dosage either, which is about as high-wire as sparkling wine gets. Until 2019 there was no 'Champagne Chavost': the village of Chavot-Courcourt, just south of Epernay, had a co-op founded in 1946 by a group of about twenty growers, one of them winemaker Fabien Daviaux's great-grandfather, and for decades it sold its juice and base wine to the big houses. Fabien agreed to take it over on three conditions - the growers had to farm organically, he needed a smaller press so he could work in precisely controlled batches, and he had to be allowed to make sans-soufre wines. His two secrets, he says, are courage and cleanliness: leaving the fruit to ripen well past the point where his neighbors have picked, then keeping every basket, brush and barrel spotless so nothing has a chance to spoil. Eureka is the purest expression of that approach, from a single clay-and-limestone parcel called Les Hurees at the foot of the Chavot hill, fermented with ambient yeast in stainless steel, bottled with zero dosage and made in tiny quantities. Serve it around 50F rather than ice cold, in a white wine glass.
