Pinot Meunier is usually the supporting player in a Champagne blend; here it is the whole show, with zero dosage and nothing to hide behind. Christophe Mignon farms 6.3 hectares split across some thirty small parcels between Festigny and Le Breuil in the Vallee de la Marne, on the deep clay and chalky tuffeau soils where Meunier has always done its best work. He is the fifth generation on this land, and he farms it biodynamically, following the lunar calendar for more than twenty years and working the vines at close to one person per hectare. The wine ferments in tank, ages a couple of years on its lees, and is bottled with no added sugar at all, which is a nervy thing to do with a grape most houses use for softness and roundness. What comes out is Meunier's own personality unmasked: spicy, citric, faintly wild, and a lot more serious than the grape's reputation suggests. Serve it cold but not icy, in a proper white wine glass rather than a flute.

Perfect Pairings

Terrific with fried chicken, pork rillettes and cornichons, or a charcuterie board with sharp mustard. The bone-dry finish also cuts through roast duck, mushroom tarts and aged Comte.

Tasting Profile

Aromas of blood orange, kumquat and white pepper over a little bread crust. Dry and vinous on the palate with fine, persistent bubbles, moderate body and firm acidity. Finishes clean, spicy and completely sugar-free.
