Biodynamic since 1999, long before it was fashionable to be. Christophe and Yuka Mittnacht farm at the foot of Hunawihr's fortified church, and they were among the very first estates in Alsace to make that commitment. Terres d'Etoiles is their Crémant: a Pinot-family blend built around Auxerrois, made in the traditional method and aged on its lees to build texture and depth. Extra Brut means the dosage is minimal, so what lands in the glass is crisp, dry and mineral rather than soft and sweetened. This is the bottle you keep cold for no particular occasion, which is the best kind of bottle to have. Serve it very cold.
