Cheverny's answer to red Burgundy, made by one of the founding names of natural Loire wine — Gravotte is the Pinot Noir-based cuvée drawn from parcels lying inside the walled Clos du Tue-Boeuf itself, the lieu-dit the estate takes its name from. The name translates roughly as "little gravelly one," and that's the point: a single 1.2-hectare plot of 35-to-40-year-old vines on especially stony, flinty clay-limestone, farmed organically and picked by hand. Thierry and Jean-Marie Puzelat took full control here in 1994 and helped launch the natural wine movement out of Paris a few years later; Thierry now works with his daughters Zoe and Louise. The house style is whole clusters, semi-carbonic maceration, native yeasts and effectively no sulfur, and the wines are deliberately about the fruit and the year rather than the winemaker's signature. Serious Pinot Noir from an appellation almost nobody thinks of for it, which is exactly why it overdelivers.

Jean-Marie and Thierry Puzelat were making natural wine in the Loire when most people thought they were crazy. Since the early 1990s, Clos du Tue-Boeuf has been the blueprint for thoughtful low-intervention winemaking—bright, alive, sometimes unpredictable, always honest. Ten hectares in Les Montils (Cheverny) plus four rented hectares in nearby Touraine. The wines are about the fruit and the year, not the winemaker's vision. Not trendy. Just really, really good.

Perfect Pairings

Roast chicken with tarragon, duck rillettes and cornichons, mushroom tart, grilled sausages with lentils, or a plate of Sologne game birds. Also good with charcuterie and soft goat cheeses from the Loire.

Tasting Profile

Light-to-medium bodied and fragrant: red cherry, cranberry and wild strawberry with a savory, stony edge underneath. Tannins are fine and gentle, acidity is bright and lifting, and the finish is dry and mineral rather than fruity-sweet. Best with a slight chill.
