The Puzelats were making low-sulfur, native-yeast Loire reds in Les Montils before natural wine was a category, and Rouillon is the bottle that shows why the approach stuck. It's a half-and-half split of Pinot Noir and Gamay from a single 1.9-hectare parcel of rust-tinted clay over limestone, farmed organically since 1996. Fermentation is spontaneous and semi-carbonic with no sulfur added during the ferment, after which the wine spends six months in used demi-muids and goes into bottle unfiltered. What comes out is light on its feet and completely transparent to the year - the point here is the fruit and the vintage, not the winemaker's signature. Give it a chill and don't overthink it.

Jean-Marie and Thierry Puzelat were making natural wine in the Loire when most people thought they were crazy. Since the early 1990s, Clos du Tue-Boeuf has been the blueprint for thoughtful low-intervention winemaking—bright, alive, sometimes unpredictable, always honest. Ten hectares in Les Montils (Cheverny) plus four rented hectares in nearby Touraine. The wines are about the fruit and the year, not the winemaker's vision. Not trendy. Just really, really good.
