Eighty-five-year-old Gamay from a single 1.7-hectare hill — that's what "La Butte" means — on flinty clay-limestone in the Touraine, hand-harvested from a neighbour's parcel the Puzelats have been buying from for years. A small share of the planting is teinturier Gamay, the red-fleshed mutation, which is why this comes out darker and more savoury than the pale, breezy Gamay you might expect from a natural Loire address. The house style here runs to whole clusters, old oak vats and as little intervention as the vintage allows. Jean-Marie and Thierry Puzelat were at the centre of the natural-wine scene in mid-1990s Paris and effectively carried the philosophy home to the Loire, so this is the real article rather than a wine styled to look like one. It's bottled as Vin de France, which here signals freedom rather than any shortfall. Serve it with a chill.

Jean-Marie and Thierry Puzelat were making natural wine in the Loire when most people thought they were crazy. Since the early 1990s, Clos du Tue-Boeuf has been the blueprint for thoughtful low-intervention winemaking—bright, alive, sometimes unpredictable, always honest. Ten hectares in Les Montils (Cheverny) plus four rented hectares in nearby Touraine. The wines are about the fruit and the year, not the winemaker's vision. Not trendy. Just really, really good.

Perfect Pairings

Roast chicken with tarragon, charcuterie and rillettes, lentils with sausage, mushroom tart, steak frites, or a plate of Comté and cured ham.

Tasting Profile

Dark red fruit — cherry, raspberry, a little blackberry — with violets and a peppery, earthy edge. Medium-light body but more depth of colour and flavour than most Gamay, with bright acidity and fine, gentle tannins. Finishes dry and savoury rather than sweetly fruity.
