Serbian bubbles from a grape you've almost certainly never tasted, bottled Brut Nature by a winemaker who put in time in Champagne. Kristina Lukić studied viticulture and oenology at the University of Udine, then worked harvests in Chile, Spain, California, New Zealand and Champagne before building Dalia in the Negotin Valley. That's Serbia's far east, running along the Danube beside the Romanian and Bulgarian borders. Crna Tamjanika is one of the local varieties that give the region very specific, recognizable wines. For now she buys from local growers who, with her encouragement, are bringing organic farming back to their vineyards. Brut Nature means no sugar is added to smooth the edges, so what's in the glass is the grape and the place, which is exactly what her low-intervention approach is going for. It's a real discovery for anyone who likes their sparkling bone-dry and a little off the beaten path.

Tasting Profile

A fully dry sparkling wine. It's Brut Nature, so no sugar goes in at bottling and the finish is crisp and lean, with no sweetness at all. It's made from Crna Tamjanika ("crna" means black), a dark-skinned grape native to Serbia.
