Jacquere is usually treated as an everyday Alpine workhorse, which makes it startling to find parcels here with vines more than a century old. Denis and Didier Berthollier farm their home slopes above Chignin on two distinct soils - limestone scree fallen from the cliffs above, and older glacial moraine - and plow the narrowest, most fragile rows by horse because nothing else fits. The farming is certified organic and biodynamic, the harvest is by hand in mid-September, fermentation runs on native yeasts in tank, and the wine is bottled with barely any sulfur. The result is light and mineral rather than showy, following a straight line to a precise finish. Drink it cold, drink it young, drink it often.
