Tauzy is Domaine Castera’s flagship dry white, made from old-vine Gros Manseng grown on clay-limestone slopes in the foothills of the Pyrenees. The 2022 vintage delivers that classic Jurançon Sec profile—bright, structured, and aromatic, but with a deep mineral core that gives it real gravitas.
It opens with white grapefruit, green pear, and alpine herbs, lifted by floral notes and a gentle touch of spice. The palate is racy and clean, with a citrus-driven acidity and a slightly waxy texture that adds just enough weight. No oak, just stainless steel and time on lees to round it out and let the terroir shine.
Ideal with seafood, goat cheese, or anything with a squeeze of lemon and a little fat. For fans of Sauvignon Blanc, dry Chenin, or mountain whites with tension and texture, Tauzy is a delicious and under-the-radar discovery.
