Four centuries of winemaking run deep at Domaine de la Chevalerie—the Caslot family has held these Bourgueil vines since 1640, and siblings Laurie and Emmanuel continue their biodynamic legacy today. Franco de Porc, their sandier and gravelly parcel, produces a lighter, fruit-forward expression of Cabernet Franc than their clay-heavy holdings. Hand-harvested with natural yeasts and minimal sulfur, the wine spent 22-28 days on skins in concrete tanks before a year in bottle to soften and integrate. The 2021 vintage was the smallest in three decades, making this an elegantly concentrated wine that rewards patience.

"The 2021 Franc de Porc is light and energetic, fit for early drinking. This comes from gravel soils and was made in concrete tanks. The 2021 is all about the fruit and does have juicy flesh, but there's a rather savory barnyard character here. While its tannin level is low, its nature is drying.
