Pauline Passot took over her family's Chiroubles domaine and quickly became one of Beaujolais' most talked-about young growers, turning out some of the freshest, prettiest cru Gamay around. Chiroubles is the criminally underrated cru that happens to be the highest in elevation, and "Aux Craz" comes from her steepest, coolest site, around 420 meters up on decomposed pink granite, from vines pushing 70 years old. Passot works the way you'd hope: semi-carbonic, native yeasts, barely any sulfur, aged in concrete to keep everything bright and unadorned. The 2024 was a cold, wet, brutally small vintage, which makes these silky, floral, mineral-driven wines all the more precious. This is elegance and altitude in a glass.

"The 2024 Chiroubles Aux Craz just needs a little more definition on the nose, black plum and raspberry fruit, not quite the delineation of the Grosse Pierre cuvée at the moment. The palate is medium-bodied with tart red berry fruit, nicely structured, with no signs of greenness. There is a judicious dab of white pepper on the finish, although it does not possess the persistence of the previous vintage. But it should give several years' drinking pleasure." —Neal Martin

Pauline Passot took over her family's domaine in 2016 after working as a sommelier at Michelin-starred Pierre Orsi in Lyon. She realized Chiroubles' potential and now produces wines of striking freshness, floral character, and silky tannins using semi-carbonic maceration and indigenous yeasts. Beaujolais' Rookie of the Year, she's rewriting what the crus can be.
