Their Savagnin Ouillé 60 Mois—meaning the barrels were topped up (ouillé) rather than left exposed to oxygen—is a rare, extended-aging bottling that showcases just how profoundly Savagnin can evolve without becoming oxidative.
The 2018 vintage, aged five full years in neutral barrels, delivers a remarkable combination of freshness and depth. Aromas of preserved lemon, green almond, chamomile, and crushed stone leap from the glass.
