Chambolle-Musigny makes the most perfumed, silken reds in the Côte de Nuits, and Domaine du Couvent — the new face of the Cheron family estates (formerly Domaine des Varoilles), run by Philippe Cheron — is quietly one of the addresses to watch. "Les Quarante Ouvrées" is a village blend of roughly a dozen small Chambolle parcels, the name a nod to the estate's total holdings there. Farmed organically, hand-harvested and raised in French oak, this Pinot Noir is all crushed red berries, rose petal and fine spice wrapped in silk. The 2017 vintage was friendly and open, so it's already a pleasure to drink.
