Same singular, unchanging Pegau — late harvest, whole clusters in the vat, aging in ancient neutral foudres — but a different animal in the glass, because 2016 was a different kind of year. Where the 2015 is plush and ripe, the 2016 is the fresher, finer-boned sibling: cooler nights gave it brighter acidity, more aromatic lift, and finer-grained tannins, making it the more energetic and structured of the two. Stick your nose in and you still get the full garrigue — lavender, thyme, black olive, leather, cracked pepper over dark blackberry — but with more tension and drive holding it together. This is the bottle built for the long haul, though a good decant already rewards you now. As always with Pegau: high in alcohol, packed with soul, made to share around a serious meal.
