Ouille means topped up, and that one word is the entire point of this bottle. Where Vin Jaune is left for years under a veil of yeast in a barrel nobody refills, this Savagnin has its barrels topped up throughout aging so that oxidation never gets a foothold - the Jura's signature grape played completely straight. The fruit comes from marl and limestone parcels above Arbois, farmed biodynamically, fermented in 500-liter barrels and aged about ten months in neutral oak. That approach is no accident: Domaine du Pelican belongs to Guillaume d'Angerville of Volnay, who came to the Jura after a Parisian sommelier fooled him with a blind-poured Arbois Chardonnay, and it shows in a wine closer in spirit to fine white Burgundy than to anything nutty or sherried. 2024 was a punishing vintage in the Jura, with frost and mildew slashing yields across the region, so quantities are small.

Guillaume d'Angerville of Burgundy fame was so moved by a Chardonnay from Jura that he founded this domaine in 2012. Fifteen hectares in Arbois, now converted to biodynamics, cultivating all five Jurassien varietals: Trousseau, Poulsard, Pinot Noir, Savagnin, and Chardonnay. Hand-harvested, native yeast, aged in seasoned oak. A leading voice in new-wave Jura.

Tasting Profile

Lemon, green apple and white peach over crushed stone. Dry and medium-bodied, with lively acidity, a fine lees-given texture and a long saline finish. No nutty or oxidative character here.
