Ladoix has long been the Côte de Beaune's best-kept secret for value, and Petitot's old-vine bottling is the reason why. Hervé and Nathalie Petitot — he in the vines, she in the cellar, both trained oenologists — farm a small parcel of old Pinot Noir at around 200 meters on chalky marl, and age the wine 12 months in barrel with only 15% new oak so the site does the talking. 2009 was a warm, generous year in Burgundy, which suits Ladoix's naturally earthy, firm-shouldered style; seventeen years on, this bottle from a private cellar has traded its baby fat for mocha, coffee and mushroom. It is fully mature and ready to go — decant it, cook a steak, and drink it.
