Jura Pinot Noir from one of the region's biodynamic pioneers. Michel-Henri and Françoise Ratte have been Demeter-certified since 1989, farming nine hectares across multiple Arbois lieux-dits. Hand-harvested, destemmed in the vineyard, three weeks of natural fermentation with indigenous yeasts, no SO2 added. Aged in Burgundy barrels, bottled unfiltered. Their son Quentin has joined the family operation. The Jura grows Pinot Noir differently than Burgundy—cooler, often lighter, with a distinctive mountain transparency. Worth exploring the contrast.
