En Remilly climbs the slope right on the boundary of Chevalier-Montrachet and Le Montrachet — you can stand in it and look straight into the most famous white-wine dirt in the world. Saint-Aubin has spent the last two decades being found out by drinkers who want white Burgundy with tension and cut, and En Remilly is the appellation's calling card: steep, stony, and built on the same thin limestone soils as its illustrious neighbors. Sylvain Langoureau works a small holding from the village of Gamay, just up the road, and his Chardonnay here is precise rather than plush — citrus, white flowers, and a chalky, saline snap that closes the whole thing off cleanly. The palate is well balanced with an attractive leesy note, a fine bead of acidity, gaining weight towards the finish with a twist of pear and gooseberry on the finish.
