Michel Drappier's family has made Champagne in Urville since 1808, and his grandfather Georges Collot—nicknamed "le Père Pinot"—pioneered the replanting of Pinot Noir in the Côte des Bar in the 1930s. That Pinot Noir dominance defines the house style: Carte d'Or is eighty percent Pinot Noir with fifteen percent Chardonnay and five percent Meunier, all first-press juice from Kimmeridgian limestone soils. This Kosher bottling—certified Pareve and Kosher for Passover by the Orthodox Union—is produced with rigorous oversight from pressing onward, yet the wine is indistinguishable in quality from the standard cuvée. Drappier was also Champagne's first carbon-neutral house. Rich, fruit-forward, and generous, with the body and depth that Côte des Bar Pinot Noir delivers. A serious Champagne that happens to be Kosher.

The secret to the magic of Drappier -- the only famous House located in the Aube -- is they operate much more in the vein of a grower: they own most of their vines, farm organically and biodynamically (sometimes plowing with a horse), focus on terroir with a slew of single parcel bottlings and continue to push the quality forward with experimentation in every aspect, never settling for status quo. But being able to buy grapes also gives them the flexibility of a House, along with much greater stocks of reserve wine and a huge Cistercian cellar to store a LOT of library bottles.
