A true amontillado, made the long way: six years under a veil of flor, then fortified to 17% to weaken that flor and left to oxidize for nearly a decade more, darkening and concentrating the whole time. That fusion of biological and oxidative aging is what separates real amontillado from the sweetened imitations, and El Maestro Sierra is one of the last bodegas in Jerez doing it entirely by hand — no electric pumps, just the canoa, jarra, sifón and rociador, with capataza Ana Cabestrero and a team of four moving the wine through the soleras manually. There's no SO2 and only a hand-sieve for filtering, so every bottle here is effectively en rama. Half-bottle format, which is the honest size for a wine like this — dry, bone-dry, and at 17.5% you don't need much. Worth knowing that the house sits on a hilltop with a clear line to the Atlantic, where the cool Poniente winds keep the flor alive year-round and give these wines their finesse.

Perfect Pairings

Marcona almonds and aged Manchego, jamón ibérico, grilled octopus, mushrooms sautéed in garlic and sherry, oxtail croquetas, or a bowl of consommé. Serve at European room temperature, around 65°F.

Tasting Profile

Explosively salty and almondy on the nose, with dried nuts and a savory, earthy depth from the oxidative years. Bone-dry and medium-bodied, more intense than heavy, with a tangy saline edge rather than fruit. The finish is long, nutty and refreshing.
