Famille Savary is a reliably excellent, family-run Chablis estate based in Maligny, at the northern edge of the appellation, now in the hands of brothers Mathieu and Maxime, who have embraced sustainable farming. Their straight Chablis is the kind of honest, classically styled bottle that reminds you why this region matters: crisp, mineral and unoaked, all chalk and citrus. This is the half-bottle, ideal for a dozen oysters and one person, or a lighter pour at the table.

Olivier Savary and his wife Francine have been vignerons in Maligny since 1984, working the clay-limestone hills that define the northern reaches of Chablis. They bottle extraordinary premiers crus from Fourchaume and old-vine expressions aged in demi-muids, sealed in wax. These are Chablis wines with real character and aging potential.
