François Chidaine joined his father Yves in the mid-1980s when the family had only 4 hectares of rented vines. He took full control in 1989, achieved organic certification in 1992 and biodynamic in 1999, and now operates 37 hectares across Montlouis, Vouvray, and Touraine. He's described as "one of the Loire Valley's great success stories," putting Montlouis "firmly back on the map of world-class Chenin Blancs." Les Choisilles takes its name from ancient Gaulish meaning "place of stones," referencing abundant silex (flint) deposits. The cuvée blends old vines (30-90 years) from three sites: Les Epinais, La Taille aux Loups, and Clos au Renard, all on tuffeau limestone with clay-flint soils. Chidaine seeks slow fermentations lasting all winter in cold limestone cellars, using wild yeast and avoiding malolactic when possible. The 2023 shows citrus, licorice, and mineral notes—balanced between freshness and fleshy fruitiness. Pure, taut Chenin with crystalline juice quality.

François Chidaine put Montlouis firmly back on the map of world-class Chenin Blancs. After taking over his father's four hectares in 1989, he's expanded to 30 hectares of Chenin and other regional varieties, all farmed organically and biodynamically.
