Named for its soil: silex noir, the rare black flint found in one tiny corner of the Vallée de Cousse, which warms early and ripens Chenin fast. The Pinons farm two parcels totaling 3.7 hectares there, average vine age around 45 years, certified organic since 2007, on a south-southeast slope. The wine is pressed whole-bunch and left to ferment spontaneously in underground tanks for two or three months, stopping naturally when the cold cellar says so, then rests on fine lees in old 500-liter demi-muids and 20-hectoliter foudres. That means it lands on the gently off-dry side of Vouvray, with the flint doing the work that sugar can't: smoke, stone and a taut acid line. François Pinon died in 2021 and his son Julien now runs the domaine, working exactly as before. This is a young 2025 — give it air, and it will reward a decade in the cellar.
