François Rousset-Martin has carved out a niche in the Jura for his thoughtful, expressive whites that channel the region’s unique soils and traditions. “Le Chaux” comes from a single vineyard on marl and limestone, and is aged sous voile (under a thin veil of yeast) but with a light, non-intrusive touch—more texture and savory complexity than full-blown oxidative character.

The 2022 vintage brings freshness and clarity, with notes of golden apple, preserved lemon, almond skin, and wet stone. There’s a whisper of nuttiness and a firm mineral backbone, wrapped in a creamy, leesy texture that gives it Burgundian polish with a Jura soul. It’s unfiltered, expressive, and vibrant—ideal for fans of both classic white Burgundy and characterful natural whites.

Serve it cool but not cold, and pair with roasted poultry, aged Comté, or mushroom dishes. Le Chaux is a thoughtful, layered Jura Chardonnay that drinks well now but can age with interest for 5–7 years.
