Gotsa was the first Georgian winery to be Demeter-certified biodynamic. Their Chinuri pet-nat is quintessentially Georgian (the base wine is fermented on its skins in quevri) but its sparkling format is unexpected and delicious, with tropical notes of pineapple, guava, apricot and ginger, a little bit of Georgian earthy funk, and a surprisingly complex tannin structure.
