Guímaro means "rebel" in Galician, and Pedro Rodríguez earns the name three times over: farming organically on the near-vertical terraces above the Sil river, in a region the wine world ignored for decades, and making a serious white in a place everyone associates with red. Flatiron has carried Guímaro for over a decade — they have been our benchmark for Ribeira Sacra since the beginning — and the Blanco is the sleeper of the range. It is led by Godello and filled out with the native Galician varieties that grow interplanted alongside it, picked off slate and granite terraces so steep the work is done by hand and, in places, by winch. Fermentation is in stainless steel with no oak and no malolactic conversion, so nothing softens or gilds the fruit; what you get is the wine's own cut and stoniness. This is Atlantic Spain at its most precise, and it drinks like a wine from a far more famous address.
